In our previous class we discussed the topic of cooking legumes or beans. I wanted to provide the instructions since you may have forgotten or some information may have been missed. This is to help the beans cook easier or quicker and be more digestible.

Step 1: Soak your beans in water overnight.

Step 2: The following morning drain the water and rinse the beans.

Step 3: Put the beans in a pot and cover with sufficient water to cover the beans. Begin heating the beans on the stove top.

Step 4: When the beans begin to boil wait a few minute or until the foam reaches the top of the pot then remove the beans from the heat source and dump them into a strainer and rinse again. Be sure to rinse off all the foam.

Step 5: Place the beans in a pressure cooker pot and cover with water or tomato juice depending on the recipe. Add salt and/or seasonings. Then seal the lid on top of the pressure cooker and cook.

Step 6: Once the pressure begins to build up in the pot and you hear the hissing sound reduce heat some and wait 5-10 minutes and remove the pot from the heat source. Once the pot cools it can be opened and contents eaten.
