Alternative Milk option 1
1/2 Cup Blanched Almonds
2 Cups Water
Sea Salt to taste

1 qt. water
1 cup Almonds, blanched (or clean, raw cashews)
1⁄4 tsp. Sea salt
Instructions:
Blend nuts with about 1 cup of the water until very smooth. Add salt and remaining water and blend to mix or pour into a pitcher and stir in remaining water. Strain, if desired. Cover and refrigerate. Shake well before using. This milk is excellent on hot or cold cereal and for cooking. (Best used within 3 or 4 days.)
Variations: For grain-nut milk, reduce nuts to 1⁄3 cup and add 1 cup hot cooked millet or brown rice. Blend until smooth.
Alternative Milk option 3
5 dates
1⁄2 cup sesame seeds
1⁄4 tsp. Sea salt
4 cups water
Instructions:
Soften dates by simmering in 1⁄2 cup water. Grind seeds until fine. Blend ingredients until smooth with 2 cups water. Put into container and add remaining 1 1⁄2 cups water (use to rinse blender). Stir well. Chill. Toasting seeds enhances the flavor. Makes 4 cups.
Alternative Milk option 4
2 cups soy beans
2 qt. water
Instructions:
Soak overnight. Heat in same water and bring to boil. Lower heat and simmer 5 minutes. Pour off foamy liquid and add cold water to stop cooking process. Blend 3 cups at a time until smooth. Add water until milk consistency. Strain through cheesecloth. If cooking, no need to strain. For milk, add honey, vanilla and pinch of salt to taste.
Alternative Milk option 5
mOO-ChA milk
1 3/4 cups water
1 cup raw cashews
8 pitted dates
2 tsp. carob powder
3 Tbsp. coffee substitute 1⁄4 tsp. salt
1⁄2 tsp. maple flavor
2 1⁄4 cups water
Instructions:
Blend first 7 ingredients until smooth and creamy.
Alternative Milk option 6
Rice Milk
1 cup cooked brown rice
1⁄2 tsp. salt
2 Tbsp. honey or date pieces (according to taste) 2 cups water
1⁄2 cup cashews
Instructions:
Blend all ingredients until smooth. Pour into container and add enough water to make 6 cups. Stir well before using as it settles.
